We left Glasgow via Scottish Citylink bus and transferred to the Stena Line Ferry, then in Northern Ireland took the Ulsterbus.  I know that sounds complicated, but it's very easy.  This can all be booked through the Stena Line website, you can choose to Rail & Sail or Coach & Sail.  We found transferring from coach to ferry to coach easy and straight forward.

When we reached Belfast we found out there was a bit of a Mexican food scene there, as a result we started really craving burrito.  I posted photos of our burritos in the post about food, but I'll admit, they weren't terrible.  Not as good as what I'm used to in California, but passable.

I was just going through my old blog posts, cleaning things up a bit by narrowing my categories and resizing my photos, when I noticed all the photos from the time in the United Kingdom and Ireland were never posted.  Probably the events that lead up to that time in my life was, and sometimes continues to be, difficult to think about so I left them out.  But now seems like a good time to revisit that time in my life.

I'll start with food, since food was one of the surprises of my time.  It was difficult to get used to British food and the lack of availability of fresh food in the north.  Don't get me wrong, I did enjoy what I ate, but the choices were limited and difficult to find lighter fare. A girl can only have so many sticky toffee puddings!

Scotland was the biggest surprise.  I had heard from countless people that Scottish food is terrible, that everything is just deep fried, but I found food in Scotland to be beautifully done, with a lot of creativity, especially in Edinburgh.  There must have been a food renaissance at some point, because the food in Scotland was the best we had in the United Kingdom and Ireland.

Irish food we enjoyed as well.  After having rather rubbery potatoes in Northumberland,  the Irish variety was much welcomed.

Afternoon Tea At The Orangery In London

Oh yes, a year after planning my family's first trip to Europe I am planning another trip to Europe this May, but sadly it will not be me who goes on it.

After jokingly suggesting my brother take a trip to Europe, I decided that it was going to happen.  I know that sounds rather bossy of me, but my brother, Richard, isn't the type to think about taking a vacation unless it's suggested to him.  I asked him where he wanted to go and he mentioned Amsterdam, after hearing me talk about all the yummy food there he said he's been curious ever since.

I started concocting an itinerary right away thinking the United Kingdom and Ireland would be a good addition to round out the trip.  Easily accessible from Amsterdam, multiple ways to travel around, stunningly gorgeous landscapes, history familiar to students on an American curriculum, and good hearty food with some locations dabbling with gourmet food that delights.

As I started to debate with myself whether or not more time to explore the Scottish Highlands
and various islands should win over Irish countryside and jaw dropping coastal cliffs,
